I bought a Philips Pasta Maker in the fall of 2024 because I thought it would be fun. Since then I’ve been working my way through traditional Italian pasta dishes, trying different shapes, sauces, and ingredients one recipe at a time.

Before I make something, I usually spend more time researching it than cooking it. I’ll read through multiple recipes, compare techniques, look at regional variations, and then put together the version I think works best. Sometimes it turns out exactly how I hoped. Sometimes I change it and make it again.

Most of what I make sticks pretty close to the classics. I like simple recipes, good ingredients, imported semola, DOP San Marzano tomatoes, and fresh herbs from my garden.

Golden Threads Pasta Co. isn’t a restaurant or a business. It’s just my excuse to keep making pasta, refining recipes, and inviting people over for dinner.

The name is a nod to Roebling’s wire rope history. The steel threads made here helped build bridges like the Brooklyn and Golden Gate. These golden threads are a little more edible.

As Fellini said, “Life is a combination of magic and pasta.”
